NOMA RETURNS IDENTITY TO THE SCANDINAVIAN KITCHEN

Today, the restaurant has two Michelin stars and is run by chef René Redzepi, of only 20, who is considered one of the major influential Scandinavian cuisine. The dishes are characterized by merging traditional regional recipes with outstanding avant-garde style. Thus, the identity Noma returned to Scandinavian cuisine, which for a long period was defined by Frenchified proposals. Redzepi’s cuisine is simple in appearance but bursting with flavors, nuances and essences. The ingredients are local woods and orchards, and most of the products are organic. The design of the place is both rustic and modern, as well as its cuisine.
