This time we decided to talk about a restaurant that has been completely transformed. El Bulli opened in 1968 and was internationally known for the culinary work of renowned Spanish chef Ferran Adria. With three Michelin stars, this site was considered the best restaurant in the world from 2002 to 2009. However, in 2011 closed its doors as a restaurant, to become “the Bulli Foundation”, dedicated to research in creativity and innovation of gastronomic science and has plans to open by 2014 with a social component without profit. Being located in an ecological reserve, the restaurant decided to support the environment and engage in food research. Its work is concerned with the physics and chemistry of food, called Molecular Cuisine. An innovative and important proposal that we found important to share.
